Want an easy waffle recipe that is perfect for fall? These Pumpkin Spice Waffles are your answer! The combination of pumpkin, spices, and pecans is addicting! It will definitely give you all of the fall vibes!

This recipe is not complicated, so it is easy to put together in the morning. This is especially important if you are trying to make them pre-coffee! You could even prep the dry ingredients and chop the pecans the night before if you wanted to. I like to do anything I can to save time in the morning!

Also, when buying your pumpkin puree, be sure to buy the can that is plain pumpkin. Sometimes there is an option that already has pumpkin pie spices in it, which you don’t want for this recipe. I like to add the spices myself so I can add exactly how much I want in there!

Since these Pumpkin Spice Waffles are so easy to make, it would be a good recipe to get kids involved if you wanted to. My kids love to dump the ingredients in, although I have to make sure they put all of it in. They have a habit of leaving a little in there so they can sample it! I also find that anything that they get to mix with a whisk is very fun for them.

EQUIPMENT

  • waffle maker
  • Whisk

INGREDIENTS  

  • 1 1/2 cup flour plus 1 tbsp
  • 3/4 tsp salt
  • 1 1/2 tsp baking powder
  • 2 tsp pumpkin spice
  • 3 large eggs
  • 1/4 cup avocado oil
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 15 oz can of pumpkin puree
  • 1/2 cup buttermilk
  • 1 1/2 tsp vanilla
  • 1/2 cup chopped pecans (optional)

INSTRUCTIONS 

  • Turn on your waffle maker.
  • In a small mixing bowl combine the flour, salt, baking power and pumpkin spice.
  • In a large bowl add the eggs and whisk. Then add the oil, sugar, brown sugar, pumpkin puree, buttermilk and vanilla. Mix until combined.
  • Add the flour mixture into the large mixing bowl and mix until combined.
  • If you are adding pecans, mix them in until just incorporated.
  • Pour the batter into your waffle maker and cook.
  • Makes about 6 large waffles.
