National Peanut Butter Day is January 24!

Two fun recipes using peanut butter

January 24 is National Peanut Butter Day. Peanut butter was invented in St. Louis by George Bayle during the 1890s. Heinz became the first company create what we know and love as peanut butter in 1923. The average person consumes more than six pounds of peanut products a year! It takes 550 peanuts to make a 12 ounce jar of peanut butter. Peanuts are an excellent source of protein. (https://www.punchbowl.com/holidays/national-peanut-butter-day)

There are so many different ways to use peanut butter. Some of my kids' favorites are peanut butter sandwiches, dip pretzels or apples in peanut butter, and peanut butter and bananas on toast. 



Here's a couple peanut butter recipes I wanted to share with you. The first is a great one for kids to help with, or even do on their own, because it's so simple!

Peanut Butter Cookies

1 cup sugar
1 cup peanut butter
1 egg

Mix all 3 ingredients together in a bowl. Roll the dough into balls. Press them down and flatten them with the back of a fork. Bake at 350 degrees Farenheit for 10-15 minutes. Remove and let cool on the baking sheet for 1 minute. Transfer to a wire rack to cool completely.


Peanut Butter and Jelly Smoothie

Ingredients for 1 serving:

  • 1/2 cup low fat milk
  • 1/3 cup nonfat plain Greek yogurt
  • 1 cup banana slices (about 1 medium banana)
  • 1/2 cup frozen strawberries
  • 1 tablespoon natural peanut butter
  • 1-2 teaspoons pure maple syrup or honey (optional)

Directions:

Add all ingredients into a blender and blend until smooth. That's it! So yummy and a great mid day snack for the whole family.
